No one is saying they do. Just that someone who suffers a "soul wound" but doesn't learn the secrets of vampirism becomes a zombie by default. Becoming a vampire then looks like a good option especially if the character doesn't know about alternatives.
As you say if a vampire fails to feed it should become more desparate until eventually it falls into a coma.
