Try looking at Manda Scott's Boudicca series for what it's like to be a Celtic warrior. Yes, they fought in shield walls, but all real warriors fought on horseback, too.

The amount of formally trained regular cavalry it can put together will be nil. Same as the amount of formally trained regular infantry :)
