Considering that trolls gleefully gulp down chaos (also an abomination,
I'd think), I maintain that undead is just plain icky food for trolls.
An effect of the animating magic, no doubt, rather than of the mundane
ickiness of the corpse.

Good point -- IMO, trolls believe that the entire corpse must be destroyed
for the spirit of the dead uz to travel on to Wonderhome. Granted, the
Zorak Zorani are theologically weird on the subject of the afterlife (from
a trollish POV), but I wonder what they do with the leftover zombie bits.
Burn 'em? Eat 'em? Throw 'em at trollkin?
