No. The parting shot is final part of an exchange. It would thus be a part of same exchange. The target number would be whatever it would be -- modified by the defender's state (dazed = no effect, wounded = -1, incapacitated = ability x1/2

You may not use Coupe when the opponent is just stunned no. They are still able to resist to some extent -- its similar to 'killing helpless opponents' from a certain other game. Remember, a Coup KILLS the opponent, without question.

No. A parting shot is the last action in a contest. After you ahve done this, the opponent is fled, fallen away out of the battle or something _dramatically_ appropriate. Thus, it is a very good idea to bid big to drive them down below that critical -9 AP (and you only have to bid 1 for the coup as well). If you've only pushed them down to -9, you can't automatically kill them with a successful coup.
