I would also like to see this happen and would help as much as I could.
And I prefer ASCII over everything else.
My suggestion is that a simple list of topics be generated first (semi-major undertaking in itself). After this the topics can be farmed out in a variety or combination of ways (e.g. volunteers, conscription from a volunteer pool, bidding?).
In a strange way, I think the encyclopedia could be both accurate and contradictory. The list of topics would include similar items such as Trickster, Eurmal, Bolongo, Bobo, which would each be discussed as accurately as possible while still remaining separate items. Prosopedia has this quality and is still useful. Perhaps I am thinking more along the line of a glossary than encyclopedia.
Even if the whole thing looked like a Johnstown Compendium (although an alphabetical compendium), it would be useful.
